Anthony Bourdain brought us together over a shared love of food and culture (and so much more that can’t fit into this post) and his suicide is a devastating loss. But, I want to celebrate what he gave me: a love of the cultures and histories behind the food we love. The San Sebastián episode of A Cook’s Tour was the first one I re-watched after moving to Spain, to acquaint myself with my new home. The classic Basque cod he makes is one I rave about to everyone who will listen, along with my Bourdain fangirl speech (and by this point there aren’t many who will put up with either). This is my tribute to that timeless classic – Bacalao a la Vizcaina, a dry martini and of course, to Chef Bourdain.
